The importance of using the right tools

Last week was my baking lab final. Our assignment was to produce beer rye rolls, as well as a few other recipes. My partner and I neglected to use the right attachment in the mixer while mixing the dough for our beer rye rolls. While we were trying to develope the gluten, the attachment we were using kept freezing up the mixer. We couldn't figure out what was wrong. The mixer had froze up at least 3 times when we decided to give up and form the rolls. We then moved on to our next recipe, which was another dough. While reading the recipe, it stated that you must use the dough hook while mixing. It had hit us! We had used the paddle the entire time while trying to make the beer rye rolls. By not using the proper attachment, the gluten could not properly develope. Our beer rye rolls were very sad when they came out of the oven. As were we. On the other side though, we found it funny, given that the recipe said "dough." Dough is usually a give away to use a dough hook. I hope i don't make that mistake again!
